A nice easy one recipe, perfect for a weeknight. Super handy with just15 mins prep time and 15-20 mins cook time. Recipe serves 4.
Ingredients:
2 of our NI Farm Quality Assured rump steaks
3 tbsp cornflour
Pinch black pepper
3 tbsp rapeseed oil
1 onion
2 cloves garlic
1 green pepper
1 red pepper
2 packets Black Bean Sauce
350g long grain rice
2 scallions (optional)
Directions:
- On green chopping board peel and finely slice onion. Peel and crush garlic.
- Wash, deseed and finely slice peppers.
- Wash and finely slice scallions.
- On red chopping board remove visible fat from rump steak and slice thinly. Wash hands after handling raw meat.
- Cook rice as per instructions on packet.
- Place cornflour in a mixing bowl, add black pepper and rump steak. Toss well.
- Heat 2tbsp oil in a wok or pan until hot, add beef and cook until brown.
- Remove beef to plate.
- Reserve meat juices from the wok/pan.
- Heat remaining 1tbsp oil in wok/pan add vegetables and stir fry for 3 mins to soften slightly.
- Add black bean sauce, beef and reserved meat juices back to the wok/pan.
- Toss all together well to combine and cook for 2 mins.
- Serve with cooked rice.
- Garnish with scallions.
